Chuño Puti con huevo – Ingredientes, receta y preparación

El chuño, también llamado “oro blanco Aimara”, es el resultado de la liofilización de papas en un método artesanal.

La fabricación de chuño es la forma tradicional de conservar y almacenar papas u otros tubérculos andinos durante largas temporadas.

El chuño blanco o negro forma parte de la alimentación indígena andina, como también de la gastronomía de las regiones donde se produce: noroeste de Argentina, altiplano de Bolivia, norte de Chile, sur de Ecuador y la región surandina del Perú.

A continuación la más completa receta del famoso Chuño Puti con huevo, una receta típica del norte de Chile.

Ingredientes

  • 500 gramos de chuño negro

  • Huesos de vacuno o cerdo

  • ¼ taza de aceite

  • 2 cebollas (picadas finas)

  • 4 dientes de ajo

  • 1 cucharada de ají color

  • 1 cucharada de orégano seco

  • 5 huevos

  • Queso de oveja o cabra (opcional)

Instrucciones

  • La noche anterior a la preparación de la receta, remojar en chuño en agua tibia.
  • Al día siguiente pelar y picar el chuño en trozos y lavar en agua fría varias veces para eliminar sabores amargos.
  • Poner los trozos de chuño en una olla, añadir 1 cucharadita de sal y huesos de carne; cubrir con agua fría, llevar a ebullición a fuego medio y cocinar hasta que el chuño esté
    blando.
  • Estilar y dejar reposar todo el chuño de la olla.
  • En un sartén calentar el aceite a fuego medio-alto y saltear las cebollas, ajo, ají color y orégano hasta dorar. Incorporar las papas cocidas y los huevos, revolviendo y cocinar 3 minutos más.

  • Antes de servir, si lo desea, puede incorporar el queso en migas, revolver y calentar a fuego bajo. Luego, servir de inmediato.
