Palta Reina – Receta paso a paso

Su nombre lo dice todo: la palta reina es una exquisita entrada chilena, muy popular en nuestro país y que consiste en una mezcla de palta con atún y un poco de mayonesa.

Aunque en el papel pueda parecer simple, es un plato contundente para comenzar cualquier comida y si quieres causar una primera buena impresión antes del plato de fondo, entonces esta es tu receta.

  • 2 paltas maduras pero firmes

  • ½ limón

  • Sal y pimienta a gusto

  • 2 latas de atún en agua o aceite

  • Mayonesa a gusto

  • ½ pimentón picado fino

  • Cebollín o ciboulette a gusto

  • 1 lechuga

  • Aceitunas negras a gusto


  • Cortar las paltas en mitades y eliminar los carozos (cuescos).
  • Rociar cada mitad de la palta con jugo de limón y sazonar con sal y pimienta. Reservar.
  • En un bol, mezclar el atún con la mitad de la mayonesa, el pimentón, cebollín (o ciboulette), sal y pimienta. Rectificar sabores.
  • Rellenar las paltas con la mezcla de atún.
  • Disponer la lechuga en 4 platos pequeños y encima colocar las paltas rellenas.
  • Decorar con aceitunas y agregar mayonesa a gusto.


  • Palta cousiño: reemplazar el atún por 4 locos cocidos y picados en cubos pequeños.
  • Palta emperatriz: reemplazar el atún con 1½ tazas de centolla cocida y desmenuzada.
  • Palta obispo: reemplazar el atún por 1½ tazas de pulpo cocido y picado en cubos pequeños.
  • Palta princesa: reemplazar el atún con 1½ tazas de pavo cocido y picado.
