Pastel de papas – Receta paso a paso

Una plato que nos transporta a nuestro pasado y que nos lleva a esa tradicional cocina chilena que ha transmitido sus recetas generación tras generación.

El pastel de papas es un plato típico chileno que mezcla un puré dorado al horno, con una exquisita carne de pino y un par de huevos para condimentar y darle aún más sabor.

Aprende paso a paso cómo preparar un exquisito pastel de papas chileno.

Ingredientes

  • 1 kilo de papas (peladas)

  • ½ taza de leche entera

  • 2 cucharadas de mantequilla

  • Sal a gusto

  • 2 cucharadas de aceite

  • 2 dientes de ajo

  • cebolla

  • Ají de color

  • Orégano seco

  • Comino molido

  • 300 gramos de carne molida (posta rosada o asiento)

  • 2 huevos

  • 2 cucharadas de pasas rubias

  • ½ taza de aceitunas negras

  • azúcar granulada para dorar

Instrucciones

  • Para el puré
  • Pelar las papas y en una olla, cocerlas en agua con sal hasta que estén blandas.
  • Retirar el agua y moler las papas.
  • Agregar a la papa molida mantequilla y leche caliente hasta que quede un puré con cuerpo (no aguado).
  • Para el pino
  • En una sartén sofreír la cebolla con el aceite y el ajo molido, sudar por algunos minutos y condimentar con sal, ají de color, orégano seco y una pizca de comino molido.
  • Agregar la carne molida y cocinar por 5 minutos o hasta que todo esté cocido y con consistencia uniforme.
  • Para el pastel
  • Disponer en la base de una budinera el pino de carne. Poner el huevo duro, las pasas y las aceitunas en forma armónica y pareja.
  • Cubrir con el puré y espolvorear azúcar granulada para obtener un color dorado.
  • Finalmente agregar un trozo de mantequilla sobre la superficie.
  • Llevar al horno por 10 a 15 minutos con el propósito de dorar, porque todos los ingredientes ya están cocinados.
  • Servir caliente.
