Calzones Rotos – Receta chilena paso a paso (fotos y videos)

Esta masa frita dulce es muy popular en Chile, sobre todo durante los fríos días de invierno.

La historia cuenta que antiguamente una señora fabricaba y vendía estos dulces en la Plaza de Armas de Santiago. Un día, con un gran vendaval, se le levantó la falda y se le vieron sus calzones rotos, de ahí, el nombre.

La miel de palma que los acompaña se obtiene de la savia de la palma chilena (jubaea chilensis) endémica de una pequeña área de Chile.

Una receta fácil, típica chilena y con la que de seguro sorprenderás a tus invitados. Aprende aquí cómo preparar unos ricos calzones rotos.

Ingredientes

  • 5 tazas de harina

  • 2 cucharadas de polvos de hornear

  • 1 taza de azúcar flor

  • 3 cucharadas de mantequilla, blanda

  • 1 huevo entero

  • 2 yemas de huevo

  • 1 cucharada de ralladura de limón

  • 2 cucharadas de aguardiente o pisco

  • Aceite vegetal para freír

  • Azúcar flor para espolvorear

  • Miel de palma para servir

Instrucciones

  • Sobre una superficie lisa cernir juntos la harina, polvos de hornear y azúcar flor; formar una corona y agregar al centro la mantequilla, huevo, yemas, ralladura de limón y aguardiente o pisco.
  • Juntar los ingredientes y formar una masa, sin amasar.
  • Uslerear la masa de un grosor de ½ cm y cortar rectángulos de 5×9 cm.
  • En cada rectángulo hacer un corte en el centro a lo largo y por el medio pasar una punta por el corte para extraer la punta.
  • Freír en abundante aceite caliente de a pocas cantidades hasta que estén ligeramente dorados, estilar en papel absorbente y espolvorear con azúcar flor aún calientes.
  • Servir calientes o tibios con miel de palma.
