Chilenitos – Receta paso a paso

Este dulce chileno es parte del repertorio tradicional dulcero de muchos países sudamericanos, herencia de las monjas católicas, que en otros tiempos, adoptaron la dulcería como un oficio rentable.

Los dulces chilenos son muy simples de elaborar y la mayoría están rellenos con manjar, algunas veces enriquecido con almendras o nueces molidas.

La versión más sofisticada se llama “chilenito”, que se cubre con un merengue italiano y se seca en el horno.

¿Les gustan los alfajores con manjar? Aprende paso a paso a preparar los más ricos chilenitos chilenos, este dulce que sorprende en todo el mundo.


  • Para el manjar
  • 6 tazas de leche entera

  • 1 ½ tazas de azúcar

  • 1 palo de vainilla

  • Para la masa
  • 1 taza de harina

  • ½ cucharadita de polvos de hornear

  • Sal

  • 3 cucharadas de pisco o cognac

  • 2 yemas de huevos grandes

  • Azúcar flor para espolvorear


  • Preparar el manjar
  • En una olla grande colocar todos los ingredientes del manjar y llevar a ebullición; reducir el calor y cocinar a fuego hasta que empiece a espesar, 50-60 minutos.
  • Continuar la cocción, revolviendo constantemente, hasta que el manjar esté espeso y dorado, 30-40 minutos más.
  • Precalentar el horno a temperatura media-alta (190°C). Enharinar una lata de horno.
  • Preparar la masa
  • Sobre una superficie de trabajo cernir la harina con los polvos de hornear y pizca de sal. Hacer un hueco al centro y agregar el resto de los ingredientes; trabajar con los dedos para mezclar bien.
  • Amasar hasta que la masa esté suave pero seca, unos 5 minutos.
  • Uslerear la masa de 3mm de grosor.
  • Cortar círculos de 6 cm, pinchar con un tenedor y colocar sobre la lata enharinada (Repetir con el resto de masa).
  • Hornear 5 minutos o hasta dorar ligeramente los bordes. Enfriar completamente antes de rellenar.
  • Armar los alfajores
  • Colocar una cucharada colmada de manjar en el centro de un círculo de masa y cubrir con otro círculo.
  • Espolvorear con azúcar flor y servir.



  • Preparación del manjar (paso 2): El tiempo dependerá del tipo de leche empleado y las condiciones de cocción. Es más seguro cocinar lentamente y así evitar que se queme al fondo de la olla. Al final el manjar se reducirá a 1 ½ tazas aproximadamente.
